Delicious! Great texture after sitting overnight. The chia seeds expand and become like little tapioca balls. I wouldn’t add the vanilla flavoring though, it tastes a little fake. Next time, I’d just keep it simple: no sweetener, no vanilla, unflavored milk, then add fruit.
These came to the rescue this week because I made the fatal mistake of not buying enough snacks this week. I had all of the basic ingredients, so I went for it. These were pretty good, but it’s useful to recognize that they are essentially no bake cookies. So I omitted the coconut flakes, chocolate and reduced the among of sweetener. I also added cocoa powder. They were a bit crumbly, but for a snack that only I am eating, they were great.
