Sweet Potato and Spinach Chilaquiles

This one I made up with stuff in the fridge, and it was delicious! I had some leftover corn chips, one sweet potato, half a bag of spinach, some cilantro, and some salsa. I cooked the sweet potato in the microwave, the chopped it up and seared it a bit in some olive oil. Then I added the chips, let them fry up, then added the spinach in at the end to wilt. I topped with salsa, a fried egg, and cilantro. This fed me for three meals and it was very fast. Will definitely make again!


Spaghetti With Mascarpone, Lemon and Hazelnuts

Yum! This was really delicious. The combo of flavors is spot on, and it comes together pretty quickly. Just make sure to start to boil the water first thing! The only change I made was fettuccini instead of spaghetti. Would definitely make again.


Zucchini and Carrot Salad

Idea from Cal Peternell’s Twelve Recipes. Use a vegetable peeler to peel zucchini and carrots into thin, fat strips. Add some fresh herbs, oil, lemon juice salt and pepper. Yum!
